This pale yellow colored stew calls for vegetables cooked in a delectable combination of fresh coconut-green chillis paste and well beaten sour curd. <br /> Vegetables like okra, bottle gourd, and drumsticks are usually used to prepare this sweet-sour flavored sauce with a tinge of spice that tickles your taste buds, though you could also use sweet potatoes, tomatoes, greens, and potatoes.<br /><br />To Make Buttermilk Stew :<br /><br />Ingredients:<br /><br />1 tbsp Coriander Seeds<br />1 tbsp Yellow Split Peas<br />1 tbsp Split Bengal Gram<br />250 gms Ash Gourd(chopped)<br />Water<br />2 cups Thick curd<br />salt to taste<br />1/4 tsp Turmeric Powder<br />Curry Leaves<br />Coriander Leaves<br /><br />For Paste:<br />1/2 cup grated fresh coconut<br /> 3 green chilies<br />1-inch ginger(chopped)<br /><br />For seasoning/poppu/tadka:<br /> 1 tsp mustard seeds<br />3 tbsp ghee<br /><br />Method:<br />1. Take Coriander Seeds, Split Bengal Gram, Yellow Split Peas in a small bowl and soak it well.<br />2. Next, add required water in the vessel and add ash gourd pieces and boil it.<br />3. For masala mixture, add fresh coconut pieces, green chilies, 1-inch ginger and grind it into a smooth paste.<br />4. Once it has done, pour it the boiling mixture, add curd and cook it for some time.<br />5. once it is cooked well, add tempering to it.<br />6. In a wok, add ghee and heat it.<br />7. Once the ghee is nicely melted, add mustard seeds.<br />8. Take thick buttermilk in the bowl and add salt, turmeric powder, and carom seeds and mix it well.<br />2. In a wok, add ghee and heat it.<br />3. Once the ghee is nicely melted, add mustard seeds, fenugreek seeds, carom seeds and green chilies.<br />4. Once tempering mixture is ready, pour it in the buttermilk mixture.<br />5.
